There are several walks marked by the local tourist office from the town centre ranging from one to about five and a half hours. The tourist office produces a small leaflet pack with each walk on seperate cards to make it easy for beginners.
The longer walks need a lot of fluids in mid-summer and maps are advisable.
Buis sits on the junction of the 2 IGN (Institute Geographique National) maps 3140ET and 3139OT so unfortunately you need to look at both. All the local maps are at the house and are easy to read.
The local paths use and intercept with the main french GR (Grande Randonnee) paths which are usually cleary marked with red/white stripes. I have still managed to get lost, although I always knew where I was but not the wherabouts of the actual path, just a few times!
A short car drive opens up an infinite number of walks into the Massif du Mont Ventoux. There is a walking path from Buis to the summit of Mt Ventoux via Brantes (GR9 and GR4)
